3. Fermentation. The most difficult and crucial stage, where it is easiest to make a mistake. The finished balls or granules from the leaves must be placed in a vessel and covered with a cloth for several hours, allowing the fermentation processes to complete the process.

Tea experts recommend using earthenware (glazed inside), glass or enamel. Plastic is undesirable because it may react with the juice. It is necessary to age the tea from 3–5 hours (weak fermentation) to one and a half days (strong fermentation).
